Pregame Plan: Get a chub of bologna from your local deli - they will cut it to weight for you. Preheat your smoker to 300 degrees F. A 5lb chub of bologna will only take a couple of hours to smoke since it is already precooked.
Step 1: Score the Bologna with a sharp knife. Do whatever design you would like - this is only for presentation. Don't cut deeper than 1/4 inch or so.
Step 2: Boil down 2 cups of brown sugar and 1 cup of water on the stove. Remove from heat and add in 1 tablespoon on garlic powder and about 3 tbsp. of yellow mustard. Mix everything together .
Step 3: Baste the mixture onto the chub of bologna. - In the video, I injected, but it didn't work out as well as I had though. You can give it a shot if you want! Place directly on the rack in the smoker - it is important to use indirect heat so you don't scorch the bottom side skin.
Step 4: Baste every 20-30 minutes again with the sugar/garlic/butter mixture. This will build in the flavor profile and will also give it some nice color.
Step 5: Once smoked, slice and sear both sides on a griddle or in a cast iron skillet. You can eat as is, or make a delicious sandwich!
